Most of Us Are Deficient in Omega-3 Fatty Acids.

As essential nutrients, omega-3 fatty acids cannot be manufactured within our bodies from other kinds of fatty acids. They must be obtained from the foods we eat. The problem is that we simply do not get enough omega -3s in our standard American diet of highly processed and refined foods.

According to Artemis Simopoulos, M.D., author of The Omega Diet (HarperCollins, 1999), omega-3 fatty acids are undetectable in blood samples of 20 percent of Americans. As for the rest of us, we are critically deficient in this vital nutrient. Since our body cannot make its own omega-3 fatty acids  we need to include more omega-3 sources in our diet.

Dr. Donald Rubin, M.D. in his book “Omega-3 Oils” (Avery, 1996) likens today’s omega-3 fatty acid deficiency to the classic B-vitamin deficiencies pellagra and beriberi of the early 1900s

The National Institue of Health tells us that a major source of problem is the imbalance between omega-6 fatty acids and omega-3 fatty acids. Reasearch shows that high levels of omega-6 fatty acids tend to cause inflamation.
